Murungakkai Sambar (Chettinad)
Earlier we were talking about Tiffin Sambar, now it is time for Meals Sambar. The only Vegetable that makes good Sambar for any occasion is your Drumstick. Even if you make sambar in any vegetable you can just add a few pieces of Drumstick, to make it tastier.
Drumstick Sambar is a Side Dish suitable for Rice. It is a Vegetable stew with dal broth and tamarind paste. It goes well with hot rice and ghee.

Drumstick Sambar / Murungakkai Sambar Ingredients:
Drumstick - 2
Small Onion - 10
Tomato - 1
Tuvar dal - 1 cup
Turmeric powder - ½ teaspoon
Tamarind - small lime size
Sambar powder - 2 teaspoon
Salt - to taste
For tempering:
Oil - 2 to 3 teaspoon
Curry leaves - few
Mustard - ¼ teaspoon
Urad dal - ¼ teaspoon
Asafoetida - ¼ teaspoon
Fenugreek - ¼ teaspoon
Cumin - ¼ teaspoon
Drumstick Sambar / Murungakkai Sambar Method:
Pressure cook tuvar dal with turmeric powder and required amount of water. Chop drumstick into one inch pieces.
Soak tamarind in ½ cup of water and extract the pulp. Add drumstick, Sambar powder, salt and tamarind water to the cooked tuvar dal and pressure cook for one sound.
Peel onion. Chop tomato. When the steam subsides open the cooker. Heat oil in a pan and add mustard, urad dal, cumin, fenugreek and asafoetida.
When they crackle add curry leaves, onion and tomato and sauté for a few minutes. Add this to the sambar and boil for some time .
Serve hot with rice.
Note:
You can make beans, avarakkai and surakkai sambar in the same method.
Another easy method is cook dal and veggies in the pressure cooker for two sound. When the steam subsides open the cooker and add tamarind water and salt and boil for some time. Finally add the tempering and serve.
