Kothavarangai Vathal | Sun dried Cluster Beans
When summer women are interested to make vathal and vadams. It is useful when the veggies are high in rate. It is handy in the rainy season also. In chettinad we make kothavarangai vathal in different method. we see that later. Kothavarangai vathal and curd rice is a good combination of food in summer. Now we see how to make kothavarangai vathal.
Ingredients:
Clusterbeans- 1/2 kg
Salt- 3 tsp
curd- 1 cup
Trim the edges of cluster beans. Wash it well.
Heat 1 litre of water. Add cluster beans and salt in the boiling water.
Cook cluster beans 3/4 th. Strain the water. Dry under the sun for two days.
Whisk curd well with required salt (we have already put salt while cooking the cluster beans). Add sundried cluster beans.
Mix it well. Again dry under the Sun for two to three days.
Put it in the glass container and use it for six months. Fry in the hot oil and serve with curd rice.
Note:
If you want spicy you can add chilli powder in the curd also.
