Paneer 65  / How to make paneer 65 
Paneer 65 is a simple and healthy recipe for kids. Elders can eat once in a while. I always use home made paneer only. If you use home made paneer then you won’t like store bought one. It is a quick and easy recipe too. Adding white pepper powder will give nice flavor to it.

Let us see how to make
Preparation time - 20 minutes
Cooking time - 10 minutes
Serves - 4
Ingredients:
Paneer - 200 gram
Rice flour          - 2 tblsp
Corn flour          - 2 tblsp
Maida - 2 tablsp
Ginger garlic paste  - 1 tsp
Fresh thick curd  - 2 tblsp
Chilli powder   - 1 tsp
Garam masala   - ¼ tsp
Salt           - to taste
Oil            - For deep fry
Spring Onion    - 1 (for garnishing)
Method:
Add rice flour, corn flour, maida, ginger garlic paste, curd, chilli powder, garam masala, salt in a bowl and mix it well.

Marinate paneer in this mixture and keep aside for about 10 to 15 minutes or keep it in the refrigerator.

Heat  oil in a frying pan and deep fry paneer till golden brown.

 Sprinkle white pepper powder and spring onion over it and serve hot with tomato sauce.

Note:
If the batter is thick you can add little water and mix it well.
Garnish with onion rings and fried curry leaves also.

Paneer Burfi

Paneer Burfi
Paneer burfi is an another rich recipe from milk.  It is also a quick and easy recipe. You can make it for coming gokulashtami and enjoy. You can make paneer burfi with homemade paneer or store bought paneer. If you buy the paneer, You can grate the paneer. If you make paneer at home, you can use as such(don’t set).

Let us see how to make Paneer Burfi
Preparation time                             - 20 minutes
Cooking time                                 - 30 minutes
Yield                                             - 500 gms
Ingredients:
Paneer                                               - 1 cup
Milk powder                                      - ½ cup
Milk                                                  - ½ cup
Sugar                                                  - ½ cup
Cardamom                                          - ¼ tsp
Slivered almond                                  - 1 tablsp
Pistachio                                             - 1 tablsp
Butter                                                   - 1 tablsp
Ghee                                                     - 1 tsp
Method:
For paneer:
Boil 1 litre milk and add curd. Stir well. When the milk completely curdle switch off the stove and strain the paneer in a clean cloth.

Add butter in a pan.  When it melts add paneer and sugar and stir.

 Mix milk powder and milk in a bowl .

Mix well without lumps. Add milk powder mixture in the paneer and stir continuously.

Stir till paneer becomes a thick mass and leaves the sides of the pan.

Chop almond and pista in to thin slices. Grease the tray with ghee and pour the burfi. Sprinkle pista and almond and cut into squares.

Note:

If you want the burfi smooth, You can mash the paneer with hands and add.

Paneer Ladoo is a rich and easy recipe for festivals. The ingredients are also easily available in every  kitchen. The taste is also very nice. Kids also love to eat paneer ladoo.

Now let us see how to make paneer ladoo
Preparation time - 10 minutes
Cooking time -  20 minutes
Yield - 13 ladoo
Ingredients:
For paneer:
Milk - 1 litre
Curd - 1 cup

For Ladoo:
Sugar - ¼ cup
Cardamom - ¼ tsp
Saffron - few
Butter - 1 tablsp
Almond - 6 for garnishing
Method:
Heat Butter in a pan.

Add paneer and sugar and stir till it leaves the pan.

Add cardamom and saffron and mix it well.

Grease the palm with little ghee and make ladoos. Chop almond into small bits.

 Garnish with chopped almonds. Keep it in the cup cake liner and serve.

Note:
If you want you can add ghee while stirring paneer.
It is good for 2 days in room temperature.
You can store it in the fridge and use for 3 to 4 days.
Adjust sugar according to your taste.
If you not able to make ladoo, you can add 2 tblsp milk powder mixed with milk. Mix well and make ladoo.

Tandoori Cauliflower / Tandoori Gobi

Tandoori Cauliflower / Easy Gobi Tikka Recipe
Tandoori recipes are good for health, as they do not include any oil. People who intend to lose weight can include Tandoori recipes often in their diet. Normally when one thinks of Tandoori recipes, immediately Tandoori Chicken will come to mind, but Tandoori Cauliflower or Tandoori Gobi is an ideal alternative available for all vegetarian lovers. I have posted paneer tikka already.
Try out this Tandoori Cauliflower or Tandoori Gobi recipe, it tastes too good and it is quite simple.

Tandoori Cauliflower / Tandoori Gobi


Preparation time - 30 minutes
Baking time - 30 minutes
Serves - 4
Ingredients:
Cauliflower - 20 florets
Curd - 2 cups
Besanflour - 2 tblsp
Chilli powder - 1 tsp
Coriander          - 1 tsp
Garam masala - ½ tsp
Turmeric powder - ½ tsp
Jeera - ½ tsp
Salt        - to taste
Chat masala powder - ½ tsp
Ajwain - ½ tsp
Kasoori methi - ½ tsp
Ginger garlic paste - ½ tsp
Method:
Hang the curd in a clean muslin cloth for about half an hour. Add hung curd in a bowl.  Add all the ingredients in the bowl except cauliflower and besan flour mix it well.

  Dry roast besan flour. Add besan flour to the mixture and mix it well.

Cook the cauliflower for 10 minutes. Add cauliflower in the mixture and marinate well.  Refrigerate the cauliflower  for half an hour.

Pre heat the oven 180 degree for 10 minutes. Place aluminium foil in a baking tray. Place the marinated cauliflower in the aluminium foil and bake for 25 to 30 minutes.

 Serve with onion rings and tandoori chutney.

Note:
If you don’t have oven, you can cook it in a tava. Sprinkle little oil over the cauliflower and cook.
Baking time may vary according to the size of cauliflower and oven.  You can adjust.
Don’t cook cauliflower more in water. Just cook for 10 minutes.

For this Diwali I decided to try paneer jamun. So I googled it and got the recipe. I tried. It Came out very well and I felt so happy.

Preparation time 30 minutes
Cooking time 30 minutes
Yield 20 (according to your size)
Ingredients:
Paneer - 1 cup
Maida - 1 tablsp
Cooking soda - 2 pinch
Oil - to deep fry
Ghee - 2 tsp
Pistachio - 10 for garnishing
For Sugar Syrup
Sugar - 1 cup (250 ml Cup)
Water - 1 cup
Rose essence - few drops
Saffron - few strands
Method:
Add Paneer, cooking soda and maida in a bowl and knead to a smooth dough.

Then make small lemon size balls out of it.Same time make the sugar syrup.

 Add sugar, Saffron and water in a vessel and boil for about 20 minutes( no string consistency).

Heat oil and ghee in a frying pan. Don’t heat the oil more.

Low the flame and fry all the jamun in batches. Cook all the sides golden brown colour. Stir often. Add fried jamun in the hot sugar syrup.

Note:
Don’t knead the dough more. If you knead more the outer layer will be hard. Knead smoothly.
If you want to make Paneer, you can use one litre full fat milk. It will give 1 cup Paneer.
Fry 5 to 6 jamun at a time. Don’t put more.
If you fry jamun in high flame outer layer gets cooked quickly, and the inner side will not be cooked. So fry it in the low flame.

 Whenever I have milk I prefer to make palkova or paneer. Palkova is a easy recipe with only two easily available ingredients. But it is a time consuming recipe. I always make palkova in the rice cooker or induction stove by the side of regular cooking. Last year I made  milk halwa,uppu seedai, sweet seedai and palkova. But I had no time to post before kokulashtami. So this year I am posting  this recipe 4 days before Krishna jayanthi.  Let us see how to make

Cooking time - 1 hour
Serves - 4 to 6
Ingredients:
Milk        - 1 litre
Sugar - 1/3 cup (80 Gram)
Method:
Boil milk in a heavy bottomed vessel. When it comes to boil you low the flame.   Stir often to avoid overflow.

Boil till it reaches thick consistency. Then add sugar and cook till it melts.

 Keep on stirring till it becomes a thick mass.

Note:
Use nonstick pan to avoid sticking at the bottom.
It will take one hour so you can use induction stove or rice cooker.
I always make palkova in the rice cooker. But this time I had one litre milk so I made it in the induction stove.

My son is a great fan of sandwich. One day when I was not feeling well. He tried to make sandwich. He took veggies from the fridge and started to cut the vegetables. He asked me to take snaps also. I was surprised to see he chopped all veggies finely. The only thing I did was put chilli powder and salt and then I took photos for my blog. Sandwich came out well. He was very happy, I also. Because he didn’t do any thing even fill his water bottle too.

Ingredients:
Preparation time - 10 minutes
Cooking time - 20 minutes
Serves - 3

Wheat Bread slices - 6
Butter - 3 tsp
For veg masala:
Onion - 1 big
Tomato - 1
Carrot - 1 small
Green chilli - 2
Coriander             - 2 tblsp
Red chilli powder - ½ tsp
Salt                   - ½ tsp
Oil                    - 3 tsp
Method:
Chop all the veggies finely. Heat oil in a frying pan and add green chilly, onion, carrot and tomato. Saute well.

Then add red chilli powder and salt and cook till done.

Put bread slices in the plate and spread butter over it. Spread veg masala over the butter.  Take another slice bread and spread butter over it .

Keep this slice over the veg masala and serve.

Note:
If you want you can roast it in the dosa pan or you can keep it in the sand wich maker too.
You can add any veggies of your choice.
You can add grated paneer or grated cheese too.
You can add ½ tsp ginger garlic paste also.
Add ¼ tsp garam masala powder too.
