Cauliflower Fried Rice

Cauliflower Fried Rice / Paleo Diet Recipe
Cauliflower Fried Rice is another paleo recipe where we are not using rice, instead we are using cauliflower. This is yet another simple paleo recipe which is tasty and nutritious. Rice is not allowed in paleo diet, so we are adding cauliflower instead of rice. It is made exactly in the way how fried rice is made replace rice with cauliflower. Try this and share your experiences


Cauliflower Fried Rice

Preparation  time - 30 minutes
Cooking time - 20 minutes
Serves - 2
Ingredients:
Cauliflower - 1
Carrot - 1
Capsicum - ½
Onion - 1
Pepper powder - ½ tsp
Salt - to taste
Tomato sauce - 1 tsp
Coconut oil - 3 tsp
Spring onion - few
Method:
Cut cauliflower into small florets. Keep it in the warm water with salt for about 10 minutes. Then wash well. Add in the mixie and grind coarsely (if you grind more it will become flour. So gently grind). This is called cauliflower rice in the paleo diet.

Steam cook this cauliflower in the steamer.

Chop carrot, capsicum and onion in to small cubes. Heat ghee or coconut oil in a pan and add chopped carrot, capsicum and onion. Sauté for few minutes.

Add salt and tomato sauce and stir. Finally add steam cooked cauliflower and sauté. Sprinkle pepper powder and finely chopped spring onion.

 Serve with tomato sauce.

 Note:
In the paleo diet Ghee, butter, virgin coconut oil and olive oil are recommended.
Soya sauce is not recommended in the paleo diet.
If you grind cauliflower more it will become flour. So gently grind.

Butter Tea / Paleo Diet Recipes
Recently I happened to make 12 paleo recipes for aval vikadan kitchen for their Paleo diet special. It was a wonderful experience for me, as I was new to this paleo stuff. I referred various books and happened to  see Neander Sevan’s Paleo Diet book. I referred and I made 12 new paleo recipe for them.
Butter Tea

Now only I am planning to post one by one for you. Paleo recipes are supposed to give more nutritious and reduce weight in the long run. You can also try and benefit out of this new thing.
Butter tea is  a nice and simple paleo recipe. You can try for breakfast and you will got the benefit. As it contains butter you will not feel hungry by taking this. Try and share your experiences by way of comments.
Preparation time                             - 5 minutes
Cooking time                                     - 10 minutes
Serves                                                  - 1
Ingredients:
Milk                                                       - 100 ml
Water                                                   - 100 ml
Butter                                                   - 1 tablsp
Sugar                                                     - ½ tsp (optional)
Tea powder                                        - 1 tsp
Method:
 Add all the ingredients in a pan.

Boil for about 10 minutes.

Strain and serve with paleo omelette.

Note:

Sugar is not in the paleo diet. If you want you can add little at first. Then you can reduce gradually and stop.

Chettinad Mutton Chops

Chettinad Mutton Chops
 Chettinad Mutton Chops/ Kadi Chops
Mutton Chops is also known as Mutton Kadi Chops and the recipe is known as Chettinad Mutton Chops. More number of ground spices are used and the recipe is very dry like Mutton Chukka but with a different spicy taste. Except for the spices Mutton Chops is easy to make and good to taste. The mutton used for this Mutton Chops is quiet different from the usual mutton; it is cut with a small mutton piece along the vertebral line bone, that is why it is called Kadi Chops.

Let us now see how to make Mutton Chops

Preparation time                             - 10 minutes
Cooking time                                     - 30 minutes
Serves                                                  - 4
Ingretients:
Mutton with bones                         - 400 gms
Chilli powder                                    - 2 tsp
Turmeric                                              - ¼ tsp
Salt                                                        - to taste
Oil                                                          - 2 tblsp
To grind:
Pepper                                                 - 1 tsp
Coriander                                            - 1 tsp
Cumin                                                   - 1 tsp
Fennel                                                  - 1 tsp
Cinnamon                                           - 2
Cloves                                                  - 3
Ginger                                                  - 1 inch
Garlic                                                    - 5 flakes
Method:
Clean and wash mutton. Heat oil in a pressure cooker and add mutton and sauté for few minutes.

Then add chillipowder, turmeric and salt and sauté. Add water and pressure cook for two to three whistle.

 Grind the ingredients finely with water  given under “to grind”.

Open the cooker when the steam subsides and transferred the mutton into frying pan.

Add ground spices and stir well. Close the pan and cook.

When the mutton reaches required consistency switch off the stove.

Serve with any dish of your choice.

Note:
You can make this chops with mutton without bones also.
Adjust spices according to your taste.
For Paleo You can use Olive oil or coconut oil.

Paneer Capsicum Gravy

Paneer Capsicum Gravy
Paneer capsicum gravy is an easy recipe. We can make it just 10 to 15 minutes. Last week I went to my native place for my cousin brother’s daughter’s marriage. My son and hubby used only few milk packets. They stored the rest in the fridge. With one half of the milk I made paneer & with the rest of the milk I made thirattuppal. Soon I will post that too. My son asked me to prepare a new recipe. My blogger friend PJ made this gravy in microwave. I made it in the gas stove with little changes.

Paneer Capsicum Gravy Ingredients:
Paneer - 200 gms
Capsicum        - 1 big
Onion - 1 big
Olive Oil         - 3 tsp
Jeera - ½ tsp
Red chilli powder - 1 tsp
Jeera powder - ½ tsp
Garam masala - ¼ tsp
Turmeric powder - ¼ tsp
Salt         - to taste
Thick curd - 1 ½ cup
Kasoori methi - ¼ tsp

 Cut paneer, onion and capsicum in to cubes. Heat oil in a pan and add jeera.

When they crackle add onion and capsicum and saute. Add all powders and salt and mix well.

Close the pan with a lid. When the capsicum is half cooked add paneer cubes and kasoori methi and stir well.

 Whisk the curd without any lumps. Add curd and boil for few minutes.

Serve hot .

Note:
Don’t boil the curd more, or else it will curdle and the gravy will be watery.
Crush kasoori methi and add then only the aroma will be nice.
You can add yellow and red capsicum also.
Don’t over cook capsicum.

Cabbage Thoran

Cabbage Thoran

Cabbage Thoran is known as cabbage poriyal in Tamil Nadu. It is go well with rice with sambar and rasam. It is very easy to make.

Cabbage Thoran  Ingredients:
Cabbage        - 200 gms
Onion - 1
Turmeric powder - ¼ tsp
Salt                - to taste
Coconut      - 2 tblsp
To temper
Oil      - 2 tsp
Mustard        - ¼ tsp
Jeera - ¼ tsp
Red chilli          - 2
Cabbage Thoran  Method:
Chop cabbage and onion finely. Break red chilli. Heat oil in a frying pan and add mustard, jeera and red chilli. When they crackle add onion and saute.

Then add cabbage, turmeric powder and salt. Stir often and cover the pan with a lid.

 Open the lid and stir often or else cabbage will stick on the bottom of the pan. Finally add grated coconut mix well .

 Serve hot with rice.
Note:
You can use green chilli instead of red chilli.
For Paleo Diet use olive oil.

Prawn Masala

Prawn Masala
Prawn Masala is otherwise known as Prawn Thokku or Prawn Curry. Prawn Masala is a very common recipe made in prawns. It tastes good and very easy to make as the ingredients are very few. As the prawns are always tender they get cooked in minutes.

Prawn Thokku is a Chettinad Recipe which is often made in all Chettinad restaurants. It is that simple that it will take only 10 minutes to make.

My hubby doesn’t eat prawn. My son asked me to try prawns recipe. In my childhood my mom made prawns masala for my brother. So I just tried this recipe. It came out very well. My hubby also ate two to three pieces. Cleaning the prawn is dedious. I don’t know how to clean. So He bought the cleaned prawns only.

Prawn Masala

Now let us see how to make Prawns Masala.
Prawn Masala Ingredients:
Prawn - 250 gms
Onion - 1 big
Greenchilli         - 2
Curry Leaves - few
Ginger garlic paste - ½  tsp
Kulambu powder - 2 tsp
Turmeric powder - ¼ tsp
Garam masala - ¼ tsp
Salt        - to taste
Oil        - 3 tsp
Prawn Masala Method:
Clean and wash prawns. Chop onion finely. Slit green chillies.

 Heat oil in a pan and add onion, curry leaf and green chilli and sauté for five minutes. Then add kulambu powder, turmeric powder, garam masala powder, salt and ginger garlic paste and sauté for  few more minutes.

 Add ¼ cup of water and allow it to boil. Add prawns and stir. Stir gently.

 Cook till done.
Note:
Prawn will get cooked quickly, so check and switch off the stove.
If you want you can add finely chopped tomato also.
For Paleo diet you can use olive oil.

Guacamole Dip

Guacamole Dip

Avocado is called as Butter Fruit in India. It is green during its tender stage. When it is ripe it turns into black purple colour. If the fruit is ripe then the outer cover (peel) can easily be peeled off. This fruit is good for diabetes. It tastes like tender coconut. I tried this for the first time. When I got this fruit it was green in Colour. I kept it in the rice drum to ripe. It took one week to ripe.

Guacamole Dip

Guacamole Dip Ingredients:
Avocado       - 1 ripe
Onion - ½
Garlic clove - 1
Tomato - ½
Green chilli - 1
Coriander      - 2 tbsp
Lime juice      - 3 tsp
Salt              - to taste
Pepper powder - ½ tsp

Guacamole Dip Method:
Peel avocado and mash it well.

 Chop onion, garlic, tomato, green chilli and coriander finely.

 Add mashed avocado, chopped vegetables, lime juice and salt   in a bowl and mix it well.

 Squeeze lime and add pepper and mix thoroughly and serve.Yummy Dip is ready.

Note:
You can serve it with Masala pappad,fried bread and canapes.
You can fill it in the pani puri and eat without pani.
