Cucumber Raitha is a good side dish for pulao, biryani and parathas. My hubby and son always like this raitha, it does not smell like inion raitha after eating. My son doesn’ t like mustard , so I made it plain.
Cucumber Raitha Ingredients:
Cucumber -1
Green chilli - 1
Coriander - 2 tblsp
Curd - 1 cup
Salt - to taste
Cumin powder - ¼ tsp
Cucumber Raitha Method:
Peel and discard the seeds of cucumber. Cut in to tiny cubes. Chop coriander and green chilli finely. Add salt and cumin powder to the curd and stir well.
Add chopped vegetables and mix thoroughly.
Serve with pulao, biryani or parathas.
Note:
Dry roast ½ tsp cumin and powder it. Always use roasted cumin powder, it will enhance the flavor of the dish.
If you want you can temper with mustard in little oil.
