Each and every dish has a unique character, Pudhina pulao is one dish of that sort which has a quality of getting along with all types of side dish either vegetarian or non vegetarian.
Pudhina
pulao can be made simply with just rice and spices. Pudhina pulao can be
prepared in basmasti rice or jeera samba you can make with it.
The Pudhina
pulao is one dish which finds a place in star hotel buffets. It goes well with
vegetarian dishes like shahi paneer, kadaipaneer, malay kofta, or non vegetarian
dishes like chicken curry, chicken chettinad, etc,.
Now let us
see how to make Pudhina pulao
Pudhina Pulao Ingredients:
Ingredients:
Basmati rice - 1 cup
Carrot - 1
Beans - 10
Tomato - 1
Onion - 1
Ginger - 1 inch piece
Garlic cloves - 7
Green chilli - 4
Pudhina(mint) - 1 cup
Salt - to taste
Water - 2 cup
For seasoning:
Bay leaf - 1
Cloves - 2
Cinnamon - 3 small pieces
Oil - 2 tblsp
Ghee - 1 tblsp
Pudhina Pulao Method:
Chop carrot, tomato and beans finely. Chop onions lengthwise. Grind pudhina, greenchilli, ginger and garlic (yellow plate). Wash and soak the rice for about 20 minutes.
Heat oil and ghee in a pressure cooker and add the seasonings. Then add onion, carrot, beans and tomato one by one and saute well. Then add the ground mixture and saute till the raw smell goes. Add soaked rice with water and salt and mix thoroughly and close the cooker and cook for one whistle.
When the steam subsides open the cooker and serve hot with cucumber or onion raitha.
Note:
You can add peas, cauliflower, soya chunks also.
Instead of water you can add coconut milk also.
