Pudalangai Vadai / Snake Gourd Fritters
Pudalangai Vadai is a traditional chettinad recipe,which I learned from my mother. It is easy to make, once you get experienced it will come out very well.
Let us see how to make Pudalangai Vadai
Preparation time - 30 minutes
Cooking time - 20 minutes
Serves - 4
Ingredients:
Pudalangai - 200 gms
Channa dal - ¾ cup
Tuvar dal - ¼ cup
Red chilli - 6
Fennel seed - 1 tsp
Salt - to taste
Onion - 1
Coriander - 2 tblsp
Oil - to fry
Method:
Chop onion, coriander and pudalangai finely. Add salt and turmeric to the chopped pudalangai and keep aside for about 10 to 15 minutes.
Clean both dal and soak it for about 30 minutes. Grind channa dal, tuvar dal, red chilli, fennel seed and salt in a mixer coarsely (Don’t add water, pudalangai has more water content).
Squeeze pudalangai and drain the water. Mix ground dal, squeezed pudalangai, coriander and onion in a bowl and mix it well.
Make small vadas in this dough. Heat oil in a frying pan and fry the vadas.
Fry both the sides well. Serve hot with rice.
Note:
Don’t add water while grinding or else you cannot make vada.
If you want vada more spicy, you can add 2 flakes of garlic and ½ inch ginger while grinding.
Chop pudalangai finely or else you will find difficult to make vadai.
