Raw Jack Fruit or Palakkai is a traditional vegetable which is in use mostly in chettinad only. Though raw jack fruit is used vastly in Kerala. It is also much in use in chettinad especially in the marriage lunch. In chettinad most of the chettinad people have jack fruit tree in their houses. The most commonly prepared recipes are palakkai pirattal and palakkai kurma.
Palakkai kurma is one side dish goes well with tiffin or rice. It is also rich in protein. Let us see how to make palakkai kurma.
Palakkai Kurma Ingredients:
Palakkai - 1 cup
Turmeric powder - ½ tsp
Small onion - 10
Garlic cloves - 7
Tomato - 1
Oil - 3 tsp
Fennel seed - ½ tsp
To grind:
Coconut - ½ cup
Fried gram - 2 tsp
Khus khus - 1 tsp
Cinnamon - 1 inch
Cloves - 2
Cumin - ½ tsp
Fennel - ½ tsp
Pepper - ¼ tsp
Green chilli - 6
Palakkai Kurma Method:
Grease the palm and knife with little oil and cut palakkai. Peel the hard thorny outer layer and cut the inner part into small pieces. Put it in the buttermilk water (to prevent browning). Cook palakkai with salt and turmeric powder in the pressure cooker for one sound.
Peel and chop onion and garlic in to two pieces. Chop tomato finely. Heat oil in a pressure cooker and add fennel seed.
When they crackle add onion, garlic, tomato and curry leaves and sauté for few minutes. Then add cooked palakkai and saute for few minutes.
Grind the ingredients under “to grind” to fine paste.Then add ground paste , turmeric powder and salt and cook for one one sound.
Serve hot with rice.
Note:
If you want you can roast the grind ingredients in little oil and grind.
