Chettinad is well known for various things like traditional houses, antique items, Belgium marbles, cotton sarees etc. But chettinad is known well to the world only by its various recipes and in the array of chettinad recipes. Chettinad chicken recipe is the first and foremost well known and well accepted recipe known through out the world.
Many make chettinad chicken recipe in various methods and call it as traditional or original chettinad chicken recipe. But here is the one which is the only authentic chettinad chicken recipe, try and you will love it.

 I referred this recipe from solai achi’s kitchen. My husband and son told me we never taste like this type of chicken. What else I want.
Now let us see how to make chettinad chicken
Preparation time         - 30 minutes
Cooking time - 30 minutes
Serves - 4
Ingredients:
Chicken - 500
Small onion - 15
Garlic - 5
Oil         - 2 tablsp
Paste 1:
Green chilli - 2
Garlic - 5
Ginger - ½ inch
Redchilli powder - 2 tsp
Coriander         - 2 tablsp
Small onion - 5
Paste 2:
Coconut              - 3 tablsp
Khus khus (or) cashew - 5
Fennel      - 1 tsp
To temper:
Bay leaf - 1
Cinnamon - 1
Cardamom - 1
Cloves - 1
Fennel - ½ tsp
Curry leaves - few
Mint - few (optional)
To marinate:
Curd - 2 tsp
Kulambu podi - 2 tsp
Turmeric - ¼ tsp
Salt - ¼ tsp
Ginger garlic paste - ¼ tsp

Method:
Wash and marinate the chicken with above ingredients. Grind Paste 1 and paste 2 in the mixie nicely.

Chop onion  and garlic  finely. Take the temper ingredients in a plate.

Heat oil in a pan and add all the ingredients under ‘to temper”. Then add chopped onion, garlic and little salt and saute.

Add ground paste 1 and sauté. Then add marinated chicken and sauté. Add little water and close the pan with a lid and cook till done.

Add ground paste 2 and cook till the raw smell goes. Serve with roti or rice.

Note:
If you want more gravy, you can add water.
If you want dry you can cook  till water evaporates.
Add spices according to your taste.
Serve with Idly, Dosa, Rice or Chapati.
