Chakka Pradhaman or Jackfruit Payasam
Chakka prathaman is a traditional sweet recipe also known as Payasam which is in the Pudding style and is served in the Dessert Course. It is much in use in the State of Kerala in India.
Chakka Pradhaman or Jackfruit Payasam is a Kerala Dessert often made in their festivals and functions. It is made from chakka varatti. Chakka varatti is nothing but jackfruit jam. I didn’t have jackfruit jam. So I made it with jack fruit.
Chakka Pradhaman Ingredients:
Jackfruit - 6
Jaggery - ¼ cup
Coconut milk - ½ cup
Cashew - 10
Ghee - 3 tsp
Water - ¼ cup
Coconut bits - 1 tblsp
Cardamom - a pinch
Chakka Pradhaman Method:
Deseed jackfruit and pressure cook. Keep aside for cooling. Then grind it in the mixie nicely.
Grind coconut and take thick coconut milk. Melt jaggery with little water and strain. Cut coconut into tiny bits.
Roast cashew and coconut bits in ghee and keep aside. Add jackfruit pulp to jaggery syrup, stir well and bring to boil.
When they mix together add coconut milk and cardamom powder.
Finally add roasted cashew and coconut bits.
Note:
Don’t boil coconut milk else it will curdle.
Add jaggery according to the sweetness of the fruit.
