Phirni is a wonderful dessert made with rice,milk,sugar,soaked badam,pista and saffron. It is a punjabi dessert. They prepare in long grain basmati rice and serve in earthen Clay pot. Variation to the basic phirni recipe are endless like Badam phirni, Kesar phirni,Pistachio phirni, Mango phirni, Strawberry phirni, and Chocolate phirni.. I specially prepared straw berry and traditional phirni for Ramzan.
Phirni Ingredients:
Milk - ½ litre
Basmati rice - 2 tbl sp
Sugar - 1/3 cup
Badam - 4
Cardamom - ¼ tsp
Pista - 5
Saffron - ½ tsp
Phirni Method:
Wash and soak the rice for half an hour. Then grind it in the mixie coarsely. Boil milk in a pan.
When it comes to the bubbling stage, add coarsely ground rice and cook well. Soak badam and pista. Peel and cut into thin slices.
When the rice is well cooked add sugar, cardamom powder and badam. When sugar melts add saffron and stir.
Finally garnish with pista and serve hot or cold.
Note:
Grinding the rice is most important to the phirni.
If the phirni is too thick you can add milk and dilute required consistency.
