Red Chilli Chutney (Chettinad)
Red chilli chutney is an easy chutney with minimum ingredients. This will go well with all tiffin items. Chillies flavor add some special effect to the taste of the chutney. This chutney tastes best when consumed after a day of preparation. This is one of the traditional side dish of chettinad.

Red Chilli Chutney Ingredients:
Red chilli - 8
Tamarind - little
Salt - to taste
Garlic cloves - 4
For Tempering:
Gingelly oil - 2 tblsp
Mustard - ¼ tsp
Urad dal - ¼ tsp
Asafoetida - 2 pinch
Curry leaves - few
Red Chilli Chutney Method:
Peel onion and garlic. Chop onion into cubes. Grind onion, garic, red chilli, salt and tamarind in a mixie nicely.
Heat oil in a frying pan and add mustard, urad dal, asafoetida and curry leaves. When they crackle add ground mixture and boil till the raw smell goes.
Stir often.
Serve with idli, dosa, vada, paniyaram, adai , upma and so on.
Note:
You can add red chillies according to your taste.
In olden days they just temper it with mustard seeds without boiling it. Nowadays most of them don’t like the raw smell of onion. So we should boil it.
