Lemon rice is one dish which is very well known and simple. It is very suitable for travel and packing.
There are numerous variety rice recipes made in south india ,like coconut rice, puliyogarai, sweet pongal, kal kandu pongal,ven pongal, vegetable biryani, brinji rice, tomato rice, lemon rice, coriander rice etc. Out of all these variety rices lemon rice will be the first must preferred rice recipe.
It is a easily made and can with stand travelling and will not go bad even up to 12 hours under normal conditions.
Lemon rice is usually prepared with three fourth cooked boiled rice as the texture will be good and it will be chewy tasty.The ideal side dishes for lemon rice are coconut thogayal, coriander thogayal or pudina thogayal.

Boiled Rice - 1 cup
Red chilli - 2
Ginger -1/4 inch
Curry leaves - few
Lemon - 1
Asafoetida - 2 pinch
Turmeric powder - 1/2 tsp
Salt - to taste
For seasoning:
Gingelly oil - 2 tblsp
Mustard - 1/4 tsp
Urad dal - 1/4 tsp
Bengal gram dal - 1/4 tsp
Cashew - 3
Peanut – 10
Lemon Rice Method:
Chop green chilli and ginger finely. Break the red chillies. Add
lemon juice, turmeric powder, asafoetida and salt in a small bowl and mix well
with a fork.
Heat oil in a frying pan and add the seasonings one by one.
Then add green chillies, ginger, red chillies and curry leaves and saute for a while. Switch off the stove and add lemon juice mixture and stir for a few seconds. Finally add the rice and mix well and serve.

Note:
If you boil the lemon juice, it will give the bitter taste. So you
can switch off the stove after adding it.
