Coconut rice is one recipe which is mostly used for packed lunches. It is also a variety in the variety rice list, but next to lime or lemon rice. Coconut rice is usually prepared in a most easy and simple way. The ideal companions of coconut rice is again coconut thogayal, coriander thogayal or potato masala (potato curry).
Here i have served with potato roast and javvarisi vadam.
Coconut rice recipe is a easy recipe for lunch menu. It is well acceptad by all and is suitable for office goers or school going kids. It tastes too good by adding more of nuts like cashew, dal and peanuts. You can make it nutritious too.
There are many different recipes available for coconut rice. But here i give the normal regular one, but you can try little variations to it. Here is coconut rice recipe.

Boiled rice - 2 cups
Coconut - 1/2 cup
Cashew - 10
Bengal gram - 1 tsp
Urad dal - 1/2 tsp
Mustard -1/2 tsp
Asafoetida - 2 pinch
Red chilli - 2
Curry leaves - few
Salt - to taste
Oil & Ghee - 3 tblsp
Coconut Rice Method:
Boil the rice and keep aside. Break the red chilli. Grate the
coconut finely.
Heat oil and ghee in a pan and add mustard, urad dal and bengal gram. When they crackle add cashew, red chilli, curry leaves, asafoetida, coconut and salt and saute for a few minutes.
Finally add the rice and stir well and serve with vazhakkai fry..

Note:
You can add grated carrot also. You can add after asafoetida and saute till done.
If you have coconut and boiled rice you can make this rice in ten minutes.
You can serve it with any dry roast vegetables or pappad.
