A Full meals in Tamil Nadu or South India will consist of Poriyal, koottu, Sambhar, Rasam, Butter Milk etc,.
The most
common recipe in Poriyal category is the Carrot Poriyal. It is easy to make and
good to taste. It gives all the goodness of carrots. In this same manner Beans
can be also made as Poriyal.
Now let us
see how to make Carrot Poriyal
Carrot Poriyal Ingredient:
Carrot - 2 big
Onion - 1
Green chilli - 1
Curry leaves - few
Coconut - 3 tblsp
Urad dal - ¼ tsp
Mustard - ¼ tsp
Oil - 2 tsp
Salt - to taste
Carrot Poriyal Method:
Peel the carrot. cut into thin rounds and cut into thin stick like. Slit the green chilli. Chop onion finely. Grate the coconut. Heat oil in a pan and add mustard and urad dal.
When they crackle add onion, curry leaves, green chilli and carrot one by one and sauté. Cover the pan with a lid. Open often and stir till done.
Finally add coconut and stir well and serve with sambar rice.
Note:
In the same method you can make cabbage poriyal.
You can grate the carrot also.
